Planted amidst Colorado’s majestic Rocky Mountains in the ski town of Steamboat Springs, Sauvage Restaurant is known for its exquisitely executed, multi-course meals and Old World wine selection. The restaurant gave back to its community by hosting a 5-course meal to raise money for the Routt County Search and Rescue (RCSAR) on June 15.
Sauvage serves elegant French cuisine on Yampa Street, right across from the search and rescue facility. They have gained a special appreciation for the all-volunteer search and rescue team, which promotes safety in mountain recreation and offers emergency services to assist people who are missing, stranded, ill, and/or injured.
“This organization is near and dear to our hearts, and it was an honor to be able to help them in any way we can,” said Victoria Vinokurova, Sauvage owner.
The RCSAR team averages 60 missions each year. Their services (including technical transport using ropes, ATVs, snowmobiles, etc.) are provided free of charge, and a large percentage of their funding comes from individual donations.
Along with the five-course meal, Vinokurova said that they offered donors “a couple of surprises as our way of showing thanks to those who donated to RCSAR.” She added that the meal was created from premium ingredients with a creative menu featuring search and rescue-inspired dishes like “S.O.S.” and “Where There’s Smoke There’s Fire.”
According to Mindy Williams, the director of the event for RCSAR, the Sauvage dinner was the perfect complement to the RCSAR mission. “The restaurant did a wonderful job of bringing the surrounding mountains to the dining experience for our event. From the spruce trees that outline their patio to the creative and fun menu, the venue and food really summed up what our charity event is all about.”
The Sauvage kitchen operates under renowned Executive Chef Garret Kasper. He came to the restaurant after four years as the Executive Chef at the Brown Palace Hotel and Spa in Denver, where he was chosen as one of Zagat’s “Top 30 Under 30” chefs.
“Any time Sauvage is given the opportunity to help out for a great cause and take the reins on creative control, it’s guaranteed to be a wonderful time,” said Chef Kasper.
