LUSH Wine & Spirits, a leading provider of high-quality libations and Parisian-inspired menu items, is now being rebranded to LUSH Food & Drink to better reflect its diversity of culinary offerings, according to Operating Partner Adam Seger.
Restaurateur brothers, Cliff and Mitch Einhorn founded LUSH in 2004 to provide Chicago with its first-ever wine boutique featuring a bar inside.
Before LUSH’s debut, Windy City wine aficionados lacked a boutique shop where they could sample spirits, wine, and beer in the appropriate glassware (versus the classic one-ounce plastic cups) in the retail setting before making purchases.
The Einhorn brothers then decided to add a menu filled with hors d’oeuvres, cheese, and charcuterie to accompany their wine bar items, thus creating a hybrid retail and bar environment.
The LUSH brand grew further in 2009 by introducing a dining room and kitchen in Roscoe Village. Ten years later, Adam Seger joined LUSH and opened a new location—LUSH Evanston, which is internally called LUSH 2.0.
This location features a comprehensive French kitchen offering menu items such as culotte steak, cassoulet featuring Toulouse sausage, duck ramen, and 18-hour onion soup.
Today, LUSH boasts one of America’s highest rates of COVID vaccination at an establishment, as its team is 100% vaccinated, and all guests must be vaccinated. As a result, the brand is entering a new phase: LUSH 3.0, or LUSH Food & Drink.
The company’s new website, www.LUSHfoodanddrink.com, is live, and the brand is currently updating all email addresses accordingly. Likewise, the brand is changing its print materials and flashing signs to reflect its name change under Adam Seger‘s direction.
Adam Seger said he looks forward to continuing to offer delectable meals, spirits, as well as cozy firepits and beautiful patios in all its locations (Roscoe Village, West Town, and Evanston) under the new LUSH Food & Drink name.
